Sprouted Black Bean Tacos

Who can resist some flavourful plant-based goodness?

Cook Time: 25 minutes
Servings: 8 tacos

What You'll Need:

  • 1 cup cooked sprouted black beans
  • 1 orange bell pepper, sliced
  • ½ of a red onion, sliced
  • 1 can (341mL) corn
  • 2 tbsp lime juice
  • 1 avocado, sliced
  • fresh cilantro for garnish (optional)
  • tortillas

Taco Spice Mix

  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • tsp red pepper flakes

How To Make It:

  • Slice the vegetables. In a small dish, combine all taco spice mix ingredients.
  • Drain and add corn to a frying pan with a small drizzle of oil. Cook on medium heat until browned, about 10 minutes. Remove from pan and set aside.
  • Add pepper and onion to a pan and soften, about 5 minutes (add more oil if needed). Remove from pan and set aside.
  • Add cooked black beans, taco spice mix and lime juice to the pan and stir until evenly coated. Heat until liquid is gone and beans are warm.
  • To assemble the tacos, place peppers, onions, corn and beans on a tortilla. Top with avocado slices, fresh cilantro and your favourite salsa.
