Sprouted Wheat Berry Salad with Apple, Cranberry and feta

This simple sprouted wheat berry salad comes together very quickly with ingredients that you may already have on hand. Satisfying and nutritious, sprouted wheat berries contain B1 and B3 vitamins and other minerals such as magnesium and phosphorous. They have a mild taste and hearty, chewy texture. 

This salad is the perfect make-ahead dish because sprouted wheat berries won’t go soggy (even with the dressing on them), making it ideal for lunch prep, meals for company (so you can enjoy a glass of wine rather than cook last minute) or even potlucks.  

It’s not necessary, but for a deeper flavour you can toast the wheat berries in an oven or toaster oven until they become fragrant before cooking them (plus it makes them smell like popcorn!).

Sprouted Wheat Berry Salad with Apple, Cranberry and Feta

What You'll Need:

  • ½ cup dry Second Spring Organic Sprouted Wheat Berries
  • 1 small apple
  • ¼ cup dried cranberries
  • ¼ cup chopped pecans
  • ¼ cup crumbled feta cheese

Dressing

  • 2 tsp olive oil
  • 2 tsp balsamic vinegar

How To Make It:

  • Cook Organic Sprouted Wheat Berries according to the package directions.
  • Chop apple and pecans (or buy pre-chopped), and crumble feta.
  • Whisk together dressing ingredients.
  • To assemble, toss ingredients and dressing until evenly coated and divide into two bowls. Serve warm or cold.
