Sprouted Pumpkin Bundt Cake

Rich and moist with the perfect maple cream cheese glaze.

This Sprouted Pumpkin Bundt Cake is the ultimate fall dessert — rich, tender, and full of cozy spice. The sprouted red fife flour adds a wholesome, malty depth that perfectly complements the earthy pumpkin, while keeping the crumb light and moist. But the real showstopper is the maple cream cheese glaze — sweet, creamy, and infused with warm cinnamon, it tastes just like a fresh cinnamon bun. This cake is perfect for sharing at autumn gatherings or enjoying with a steaming cup of tea on a crisp afternoon.

ingredient tips & substitutes

  • Oil: These can be made with any neutral oil (coconut, vegetable, canola etc.)
  • Egg: we haven’t tried this recipe with an egg substitute, please let us know if you give it a try!
  • Flour: these can also be made with sprouted sifted wheat or light spelt flour
  • Pumpkin: be sure to read the label carefully, this recipe must be made with 100% pumpkin. Pumpkin pie filling will not work

recipe notes

  • If you don’t have a bundt pan, this can be baked as a sheet cake or as two rounds, but be sure to adjust the baking time accordingly
  • This cake needs to be stored in an airtight container in the refrigerator (because of the cream cheese glaze). Bring to room temperature before enjoying.

Prep Time: 20 minutes
Cook Time: 50 minutes

What You'll Need:

  • 3 cups (360g) Sprouted Sifted Red Fife Flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • 4 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ground cloves
  • ¼ tsp ginger
  • 1½ cups pumpkin puree (not pumpkin pie filling)
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 4 eggs
  • 1 cup neutral oil
  • 1 tsp vanilla

Maple Cream Cheese Glaze

  • ¼ cup cream cheese, room temperature
  • ¼ cup maple syrup
  • 1½ cups powdered sugar
  • ¼ tsp cinnamon
  • pinch salt
  • ¼ tsp vanilla

How To Make It:

  • Preheat oven to 350℉. Prepare a bundt pan by greasing thoroughly (we find a spray easiest, but if buttering be sure to get in every nook and cranny!).
  • In a large bowl, combine flour, baking powder, baking soda, spices and salt.
  • In a separate bowl, combine sugars, oil, pumpkin, eggs and vanilla.
  • Combine wet and dry ingredients and mix by hand just until smooth. Do not overmix. Pour into prepared pan and even out the top with a spatula.
  • Bake 50-60 minutes, until a toothpick comes out clean.
  • Allow to cool for 10 minutes before turning out onto a cooling rack. Allow the cake to cool completely before glazing.
  • Prepare glaze by mixing all ingredients until smooth. If the cream cheese isn't combining smoothly, an immersion blender can be used to bring it together. This is a thin consistency once on the cake (think donut glaze). You can adjust the thickness of your glaze to your liking by adding less maple syrup or more icing sugar/cream cheese to thicken.
  • Place the cake on a plate or tray to catch drips. Pour the glaze and allow it to run down over cake. If too much runs off, it can be collected and poured over again.
