Sprouted Amaranth Porridge

A wonderful alternative to oatmeal, sprouted amaranth porridge makes a delicious and satisfying breakfast.

Don’t let oats get all the breakfast glory, switch up your breakfast porridge routine with some sprouted amaranth. When amaranth is cooked as a porridge it takes on a thick consistency but the grain remains whole, adding a slight crunch. Sprouted amaranth has an earthy, slightly sweet flavour that pairs well with other earthy flavours like nuts and nut butters, or tart flavours like berries.   

Topping ideas:

  • Nut butter
  • Chopped nuts
  • Granola
  • Chia seeds
  • Hemp hearts
  • Fresh or cooked berries
  • Coconut
You can try the recipe with other types of milk but they may scald, and I find coconut milk really helps to give it a thick porridge consistency (and a nice flavour).

Cook Time: 20 minutes
Servings: 1

What You'll Need:

  • ¼ cup Second Spring Organic Sprouted Amaranth (dry)
  • ¾ cup water
  • ¾ cup coconut milk

How To Make It:

  • Add amaranth, water and coconut milk to a pot. Bring to a vigorous boil for 5 minutes, then reduce heat to low, cover and simmer for 15-20 minutes, stirring occasionally.
  • Serve warm with desired toppings.
